Ruminations on What I Know…

I’ve been drowned immersed in the low residency program at AIB for 9 of 10 days. Art boot camp, in a sense. My mind is spinning; and I need a little respite.
I find myself here in this swank, dark little place collecting and gatherings thoughts…I need to go back to something I know–and can actually talk about without making my head spin.
So, let’s talk about sherry!
A fortified wine, sherry is vastly under appreciated and widely thought of a solely a cooking wine. Not so. Ranging from bone dry to succulently sweet, there is something there for every palate.
Tonight I’m sampling La Cigarerra Manzanilla — a dry, medium weight offering. Pale 20120114-185045.jpggold in color–or at least its pale gold? It’s dark in here. Sweet grass, lemon oil and hints of bread dough resonate in the nose. Swirl the glass and you reveal nuances of white flowers. When sipped, vibrant citrus flavors of lemon mingle with spicy, dried grass and creaminess that is reminiscent of something I cant pinpoint (my mush brain in full effect!) Blanched almond flavors and a bracing mineralogy are in full effect on the finish. A lovely example of the style.
In addition, a great way to clear the mind.
Ahhh, mental clarity — for the moment, at least!
